Sicilian Roast's new pizza might change how you think about anchovies

Sicilian Roast's September chef's feature is an anchovy pizza built for people who think they don't like anchovies. The Anchovy, Leek & Crispy Potato Pizza swaps in mild Sicilian white anchovies for the intensely salty, cured kind, then pairs them with sweet roasted leek cream, fior di latte and crispy potato strings.
White anchovies bring a cleaner, milder flavor than the dark, salt-cured version most people know, and the roasted-leek base adds a second layer of sweetness — a softer backdrop that lets the fish come through instead of overpowering the pizza.
Crispy potato strings finish it off, piled on in a generous tangle. The kitchen adds them after the pizza leaves the oven, so they stay crisp against the soft toppings underneath.
"White anchovies are a different fish from what people expect. You get the savory note without the sharp salt," said Chef Matt. "Cooking the leeks down into a cream gives a sweeter base than tomato, and the potato strings go on at the very end so they stay crisp when the pizza reaches the table."
The Anchovy, Leek & Crispy Potato Pizza is available through Sept. 30 at all four Sicilian Roast branches: Legazpi Village, Makati; Santolan Town Plaza by Rockwell, San Juan; The Arton Strip by Rockwell, Quezon City; and Molito Lifestyle Center, Alabang. All branches serve lunch and dinner.
